Fair Trade Month Recipe: Orange Spice Tea Banana Bread Muffins

October is Fair Trade Month and we’re celebrating #FairMoments with Fair Trade USA. As consumers, we create Fair Moments by incorporating Fair Trade Certified ingredients and products into our every day lives. Find your own Fair Moments with this recipe that is chock full of Fair Trade ingredients. These banana bread muffins are sweet and satisfying with a touch of orange spice, perfect for on-the-go breakfast or snacking!

Orange Spice Banana Bread Muffins

Ingredients:
– 1/2 cup water
– 6 heaping tsp Orange Spice Black Loose Leaf tea
– 1/2 cup butter
– 1/4 cup Fair Trade dark brown sugar
– 3/4 cup Fair Trade white sugar
– 1 cup plain greek yogurt
– 1 tsp baking soda
– 3 very ripe Fair Trade bananas, mashed
– 2 eggs
– 2 1/4 cups all purpose flour, sifted
– optional: chopped walnuts

Instructions:
1. Pre-heat oven to 350 degrees.
2. Bring water to a boil in a saucepan, remove from heat, and add loose tea leaves.
3. Steep tea for at least  5 minutes, and strain the tea leaves out of the water.
4. In the saucepan, combine steeped tea, the brown and white sugars, and butter.
5. Place saucepan back on stove over medium heat, stir until butter and sugars have combined. Set aside to cool.
6. Mix yogurt and baking soda in large mixing bowl, let stand for 5 minutes.
7. In the large mixing bowl, combine cooled tea and sugar mixture with yogurt. Add the eggs and gently mix.
8. Gently mix in the mashed bananas.
9. Place liners in muffin pan and fill each 1/2 way with batter.
10. Bake for 15-20 minutes, or until toothpick comes out clean.
Makes approximately 21 muffins.

Chamomile Clementine Cream Soda

Soak up the summer sun with a citrusy-sweet Chamomile Clementine Cream Soda. This soda is vegan, gluten-free and extra refreshing! Sweet clementine juice combines with the honey notes of chamomile and a fresh pop of mint to create a distinct and customized treat.

Chamomile Clementine Cream Soda

Ingredients:
– 6 clementines
– 3 tea bags of Chamomile Mint tea
– 2 cups of water
– 2 Tbsp agave
– 1 tsp vanilla
– 1 can full fat coconut milk
– 1 bottle of club soda
– ice

Instructions:
1. Boil water and steep tea for 10 minutes. Remove tea bags and cool.
2. Juice clementines into a bowl or large measuring cup.
3. Combine tea and clementine juice.
4. Fill a tall cup with ice, fill the cup two-thirds with tea and clementine juice, add 2 tbsp coconut milk, and top with club soda.5. Stir gently.
Makes approximately 6 drinks.

 

Lapsang Souchong Portobello Mushroom Marinade

lapsangportobello8.jpgPortobello mushrooms are a great meat substitute for vegetarians and meat eaters alike! This smokey lapsang souchong tea based marinade creates a unique flavor profile that pairs perfectly with any barbecue classics. Dress this meatless burger up with pesto, aioli, caramelized onions, whatever you can dream up! We kept it simple with pea shoots, tomatoes, and mayo with a side of fingerling potatoes. Yum!

Lapsang Souchong Portobello Mushroom Marinade

Ingredients:
– 1 1/2 heaping Tbsp Lapsang Souchong loose leaf tea
– 1 cup water
– 2 large large portobello mushrooms (stems removed)
– 1 large clove of garlic (minced)
– 1 Tbsp sesame oil
– 1 Tbsp tamari/soy sauce/aminos

Instructions:
1. Brew tea in boiled water for 10 minutes.
2. Strain tea into a bowl and add garlic, sesame oil, and tamari and stir.
3. Wash and dry the mushrooms and remove the stems.
4. Place mushrooms in a pan large enough to fit the mushrooms side by side.
5. Pour marinade over the mushrooms and make sure they are covered.
6. Marinate mushrooms for at least an hour.
7. Heat the broiler in your oven.
8. Remove mushrooms from marinade and place them on a baking sheet. Be sure to reserve the marinade.
9. Spoon a few tablespoons of marinade over the mushrooms.
10. Broil the mushrooms for 4-5 minutes on each side.
Enjoy these mushrooms plain or on a burger bun with your favorite fixings!

Wellness Iced Tea: Cranberry Lime Detox

Cranberry Lime Detox Iced Tea

Ingredients:
– 2 cups water
5 tea bags of Simply Detox Wellness Tea*
Juice of 3 limes
1 cup cranberry juice
3 Tbsp
honey (or to taste, less if using sweetened cranberry juice)
– 1 cup sparkling water
– ice

Instructions:
1. Begin by boiling fresh, filtered water.
2. Place tea bags in heat safe measuring cup.
3. Pour 1 cup of boiled water over tea bags.
4. Steep tea for 5-10 minutes and then remove the tea bags.
5. Add honey to the hot tea and stir to dissolve.
6. Add 1 cup of cool water to tea and honey mixture.
7. In a pitcher or serving container pour in tea mixture, cranberry juice, lime juice, sparkling water, and stir.
9. Add ice to pitcher to chill.
10. Serve over ice with a lime wedge and mint as garnish.
Makes approximately four 8oz servings.

Recipe: Blackberry Sencha Green Tea Popsicles

Organic and delicious!

Most of the country is still being scorched by hot summer weather. We hope to help you cool down with these deliciously simple three ingredient popsicles! Blackberries grow wild and abundantly in the Seattle area where we are based, making these tasty berries easy and fun (and cheap!) to find during the summer and the perfect fruit for this icy treat.

Here’s what you’ll need:

– Popsicle molds or small cups

– popsicle sticks

– Blender

Ingredients:

– 3 teaspoons of Choice Organic Teas Sencha loose leaf green tea (or three tea bags of our Premium Japanese Green)

– 2 cups of water

– 2 cups blackberries (fresh or frozen)

– ¾ cup honey

Makes around 10 large popsicles depending on your molds.

A steaming cup of green tea, blackberries, and honey are all you need!

What to do:

1. Steep 3 teaspoons of Sencha Loose Leaf Green Tea (or three tea bags of Premium Japanese Green) in 2 cups of 180 degree water for 4 minutes. Strain out the loose tea (or remove tea bags).

2. Cool the tea and use a blender to blend tea, blackberries, and honey until liquefied. Optional: Use a strainer to separate the blackberry seeds from the liquid before pouring into the molds.

3. Pour into your popsicle molds or cups, place popsicle sticks in the molds.

Tip: If you’re using cups as popsicle molds, you may want to wait for them to become more solid before adding the popsicle sticks to ensure the sticks freeze upright.

4. Place popsicles in the freezer to freeze until they are solid and easily removed from the molds, and enjoy!

TIp: To ease the popsicles out of a plastic mold, briefly run tepid water over the molds and they should come right out.
